Teaches the history and theory of food, and supervises dissertations in the 2nd cycle, master design & culinary.
He was a student of Jacques Derrida at EHESS, under whose supervision he wrote his DEA in 1992. With a CAPES in philosophy, he taught at secondary level before joining the Institut français de la mode. He has also been teaching philosophy at the ÉSAD in Angers since 2019 and is a researcher attached to the ACTE laboratory at the University of Paris I Panthéon-Sorbonne.
Olivier Assouly defended his philosophy thesis in 2015, under the supervision of Chantal Jaquet, at the University of Paris I Panthéon-Sorbonne 2. He will receive his habilitation to direct research in 2019.
